Grilled Peaches

When summer comes, so many of us love to barbecue. When you want to eat low fat food, grilling your meat is always the best way but so often, the accompaniments are far from being low calorie or low fat. Plus, puddings tend to be somewhat neglected which is such a shame as summer fruits are wonderful. Peaches and other stoned fruit are far more versatile than most people realise and with just a few deft touches, they can be turned into dreamy, low fat desserts. Whilst the grill is still hot and everyone is tucking into burgers, set up a treat by grilling some luscious peaches.

Serve with frozen yoghurt on a hot day or a low fat ice cream. If the other barbecue guests crave something more calorific, offer them mascarpone. If the barbecue isn’t fired up, no worries – the peaches can be grilled or griddled indoors.

Requirements
  • Sharp knife
Ingredients
  • 2 peaches, halved and pitted
  • 1 teaspoon flavourless oil (such as groundnut or grapeseed)
  • Shredded fresh mint to serve
Directions
Cut peaches in half and remove the stones

Brush the face of each half with the oil

Place face down on the hottest part of the grill

Grill until tender

Serve immediately with low fat ice cream, frozen yoghurt, mascarpone or reduced fat Greek yoghurt

Sprinkle with shredded fresh mint.
