Fruity Baked pears

Pears are lovely and juice when ripe but if you cook them when they are still firm they go gorgeously soft and very sweet. This recipe definitely showcases this lovely fruit and is nice and sweet without being laden with calories. Add in all those lovely good nutrients from the walnuts, raisins and dates and you’ve got a low fat dessert made in heaven. At this calorie count you can afford to serve it with a small amount of low fat crème fraîche or marscapone. This would make an excellent low fat, low calorie alternative to Christmas pudding if you are dieting on that special day.

Ingredients
  • 2 Tablespoon chopped walnuts (1/2 oz.)
  • 2 medium-sized firm pears
  • ½ cup orange juice
  • 1 Tablespoon plus 1 teaspoon brown sugar
  • ⅛ tsp ground cinnamon
  • Dash of salt
  • ¼ cup pitted, chopped dates
  • 2 Tablespoon raisins
Directions
Preheat the oven to 375°F.

Halve and core the pears
Spread the walnuts evenly in a single layer on a baking sheet.

Bake for 3-4 minutes until lightly browned.

Place the orange juice, brown sugar, cinnamon, and salt in a small saucepan.
Heat on medium/high until small bubbles begin to break the surface.

Cook for 2 more minutes, stirring constantly with a whisk, until slightly thick.

Stir in the dates, raisins, and walnuts.

Remove from heat.

Place the pears cored side up in a small baking dish.

Spoon the fruit mixture evenly into each pear half

Drizzle with the fruity syrup, reserving 2 tablespoons of syrup for garnish

Put in the oven and bake the pears for 15 minutes

Drizzle the reserved syrup evenly over the pears.
