Watermelon, Olive and Feta Salad

This a terrific recipe that just sings of summer. Even though not in season all year you can still get watermelon in the depths of winter so what better to brighten up a cold December day? The luscious sweetness of the juicy watermelon counterbalances the salty tang of the creamy cheese and olives. Not only does this salad taste good but it’s exceedingly nutritious. There is some fat content but it’s all good stuff of the unsaturated variety. As long as you limit the quantity of cheese, this dish is perfectly acceptable for a low fat diet.

Requirements
  • 2 mixing bowls
  • 1 serving bowl/platter
  • Sharp vegetable knife
Ingredients
  • 1 small Red Onion
  • The juice of 2 limes
  • 1½ kg Watermelon
  • 250 g Feta cheese
  • Handful of fresh parsley
  • Small handful of fresh Mint
  • 4 tablespoons Extra Light Olive Oil
  • 100 g pitted Black Olives
  • Extra mint and parsley leaves to garnish.
Directions
Peel and slice the onion

Cut the Watermelon into chunks

Place the onion in a bowl with the lime juice.

Crumble or cut the feta into chunks

In a large bowl place the watermelon and feta

Chop the herbs and add to the melon/cheese

Next add the onions in lime juice, olives and olive oil.

Toss the ingredients gently so the watermelon doesn't crumble

Add black pepper to taste and garnish with the extra parsley and mint leaves.
