Cauliflower Cheese with Crunchy Topping

Cauliflower cheese is a great favourite but avoided by dieters because of the usual heavy fat content. This version cuts out a huge proportion of the fat but doesn’t compromise on taste. The added crunch of the topping gives an interesting and welcome texture. It’s great served alongside grilled meats or on its own for lunch.

Requirements
  • Saucepan
  • Sharp vegetable knife
  • Mixing bowl
  • Ovenproof dish
Ingredients
  • 1 cauliflower (about 400g prepared weight)
  • 250g low fat crème fraiche
  • 1 egg
  • 50g and 10g grated low fat cheddar (mature)
  • Salt and pepper
  • 2 Handfuls of reduced fat tortilla chips (about 25g)
Directions
Cut the cauliflower into florets and steam or boil until just tender seasoning to taste.

Drain very well.

Transfer to oven proof dish.

Crack the egg into a mixing bowl and lightly beat then add the crème fraiche, 50g cheese and ½ teaspoon freshly ground black pepper. Mix until well combined.

Pour over the cauliflower and bake in the oven for about 20 mins.

Crush the tortilla chips and mix with the remaining cheese.

Sprinkle over the cauliflower and return to the oven or place under a hot grill until it’s golden brown and bubbling – about 5 minutes
If using the grill take care to not burn the crunchy topping.

If you don’t have any leftover tortilla chips use some fresh white breadcrumbs and ¼ teaspoon paprika.
