Creamy Cauliflower Purée

In this lovely smooth cauliflower mash recipe, the little bit of oil, butter milk and butter are an affordable luxury because the only other ingredients are totally low fat. The addition of garlic really perks up the flavour. It makes a fabulous alternative to mashed potatoes. There’s about ¼ of the calories of an equivalent portion of typical mashed potatoes.

You can vary the dish by adding fresh herbs or if the rest of your meal is sufficiently low fat, add a little grated low fat cheese.

Ingredients
  • 1 head of cauliflower 8 cups bite-size cauliflower florets (about 1 head)
  • 4 cloves garlic, crushed and peeled
  • ⅓ cup non-fat buttermilk
  • 4 teaspoons extra-virgin olive oil, divided
  • 1 teaspoon butter
  • ½ teaspoon salt
  • Freshly ground pepper to taste
  • Snipped fresh chives for garnish
Directions
Cut the cauliflower into bite size florets

Peel and crush the garlic

Steam (or cook in microwave) the garlic and cauliflower together until very tender

Put cooked cauliflower and garlic into a food processor

Add the butter milk, 2 teaspoons of the oil, the butter and salt and pepper.

Blend until smooth and creamy.

Transfer to serving dish.

Drizzle with the remaining oil and garnish with the chopped chives.
